Raspberry Flaugnarde

Raspberry Flaugnarde is an interesting French dessert I found in a book recently which is somewhat like a cross between a flan and a baked cheesecake. This recipe deviates from the more traditional Flaugnarde with the addition of cream cheese.

Ingredients
Raspberry Flaugnarde (Serves 8 )
  • 250g Cream cheese at room temperature
  • 1 Cup Milk
  • 6 Eggs
  • 2 Tsp Vanilla Paste
  • 1/2 Cup Bakers Flour
  • 1 1/2 Cups caster sugar
  • 3 Cups Raspberries
  • 2 Tbs Icing Sugar
  • 8 Oven Safe Ramekins

Directions:

  1. Preheat oven to 200*C
  2. Mix together the cream cheese, vanilla paste, caster sugar, flour and eggs in a large bowl until well combined
  3. Once the mixture is combined, beat in the milk gradually
  4. Divide the raspberries evenly among the ramekins
  5. Pour the mixture over the berries filling the ramekins until 3/4 full
  6. Place all of the ramekins into the oven for around 25-30 minutes, or until they have browned slightly on the top and have raised slightly
  7. Dust with Icing Sugar and serve immediately with cream.
